- Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 3 large eggs
- 1/3 cup vegetable oil
- 1/3 cup milk
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 2 cups raspberries
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- Instructions:
- Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, beat sugar and eggs until light and fluffy. Add in oil, milk, and vanilla extract, and beat until combined.
- Add in the dry ingredients and mix until just combined.
- Pour the batter into the prepared pan and bake for 25 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
- In a small saucepan, combine raspberries, sugar, and cornstarch. Cook over medium heat until mixture thickens, stirring frequently.
- Remove cake from oven and let cool completely. Once cooled, cut cake into 2 layers.
- In a large mixing bowl, whip heavy cream until stiff peaks form. Fold in powdered sugar and vanilla extract.
- To assemble the showstopper, place one layer of cake on a serving plate or cake stand. Spread a layer of vanilla pastry cream over the cake layer, followed by a layer of raspberry sauce.
- Cover with the second layer of cake and repeat the layers of pastry cream and raspberry sauce.
- Spread whipped cream over the sides and top of cake. Garnish with fresh raspberries and whipped cream rosettes.
